Hunger for Moon Cakes already? The first ever moon cakes I tried this year was from Zuan Yuan Restaurant in One World Hotel. Together with me, taufulou.com, foodpoi.com, and sneakylily joined forces for our cooking lesson. The highlights was the Low Sugar Wheat Grass and Green Tea Snow Skin Mooncakes. Snow skin recipes are icing sugar, glutinous rice flour, shortening and green tea powder.
Above: The preparations
Above: Ok ! Now stand at your position
Above: Everyone was trying to follow the steps
Above: Place the flour and the green tea powder on top.
Above: Next, put the softener and knead with your fingers till all are perfectly mixed
Above: Ah Bok was very serious, gambateh!
Above: Add a full cup of water then continue to press with your fingers.
Above: When you're done, clean your hand so not to waste any of them
Above: This should be the desired outcome, a BIG GREEN TEA BALL !!
Then you can make the balls into a long shape and sprinkle some flour on it so it wont be sticky anymore.
Above: Time to cut it into small pieces and weigh it to correct measurement.
Above: Flatten it. Then hold in on your left hand while the other hand holding the paste.
Above: Everyone is trying hard to follow.
Above: Now, this requires practice. Look at the pictures, no need to explain.
After the moon cakes is ready, time to put them into the flour-dusted mould and bash them !
Whack it side-side-back-front onto the table to embed the shape and emblem.
Above: Whack it left, right then overturn it.
Above: There, you get a perfect moon cakes, ready to be stored in the fridge.
